Ingredients:
2 lb – ground lamb
2 tsp – salt
1 tsp – pepper
2 – eggs
½ cup – parmesan
1 cup – breadcrumbs
2 tsp – mint
2 tsp – parsley
1 tsp – garlic (minced)
1 oz – onion (minced)
As needed – olive or avocado oil
As needed – flour
Directions:
- Mix the lamb, salt, pepper, eggs, parmesan, breadcrumbs, mint, parsley, garlic and onions together well in a cold bowl.
- Heat pan to Medium-high heat with ½” deep of oil.
- Portion lamb mixture with spoon and shape with flour, shake off excess.
- Place into oil and cook 2-3 minutes per side. Remove and drain on paper towel.
- Garnish with fresh lemon wedges and serve with tzatziki sauce.
