Standard Crepe Batter

• 4 tbsp (2 oz) melted unsalted butter3. Slowly whisk in melted butter.
• 9 oz all-purpose flour4. Sift flour into batter, mixing until smooth.
5. Strain through a fine sieve to remove lumps.
6. Chill for 1 hour before cooking.

Gluten-Free Option

Bananas Foster Sauce (Sweet)

• 3/4 cup sugar
• ½ ounce fresh lemon juice (about half a lemon)
1. Caramelize sugar and lemon juice in a pan until golden.
• 4 oz heavy cream2. Carefully add cream (it will bubble violently!).
• 2 oz banana liqueur
• 2 oz brandy
3. Stir in liqueur and brandy (avoid flames!).
• 2 ripe bananas, sliced
• Cinnamon, nutmeg, clove (foster profile)

4. Add bananas, spices, lemon, and salt. Simmer 2-3 mins.
