• 2 lb ground lamb
• 2 tsp salt
• 1 tsp pepper
• 2 eggs
• ½ cup parmesan
• 1 cup breadcrumbs
• 2 tsp mint
• 2 tsp parsley
• 1 tsp garlic (minced)
• 1 oz onion (minced)
1. Mixing: Mix the lamb, salt, pepper, eggs, parmesan, breadcrumbs, mint, parsley, garlic and onions together well in a cold bowl.
As needed – olive or avocado oil2. Heating: Heat pan to Medium-high heat with ½” deep of oil.

• As needed – flour
3. Shaping & Coating: Portion lamb mixture with spoon and shape with flour, shake off excess.

4. Cooking: Place into oil and cook 2-3 minutes per side. Remove and drain on paper towel.
• Fresh lemon wedges
• Tzatziki sauce
5. Garnish & Serve: Garnish with fresh lemon wedges and serve with tzatziki sauce.
