Greek Dressing

IngredientsInstructions
• 1 shallot, diced
• 20 cloves of garlic, peeled
• 3 oz homemade mayonnaise (made with avocado or olive oil)
• 3 oz French Dijon mustard
• 1 tbsp fresh ground black pepper
• 3 oz house seasoning (or substitute with 2–3 tbsp kosher salt, to taste)
• 3 oz dried Mediterranean oregano
1. Blend Base: Combine all ingredients except olive oil in a blender and blend until smooth.
• 1/4 cup fresh parsley and dill, finely chopped
• 1 cup fresh lemon juice
• 1 cup apple cider vinegar
• 1 quart olive oil
2. Emulsify: Slowly drizzle in the olive oil while blending until the dressing is emulsified and creamy.
